This salad couldn't scream summer any more if it were donning shades and sipping an umbrella drink poolside. When watermelon and strawberries show up at our favorite farm stand (Oakhurst Fruit Stand, 40842 Hwy 41), this is what needs to be done. The savory addition of olive oil, feta, salt, and pepper (yes, pepper does wonders here) complements the sweetness of the fruit and basil to elevate the taste of all components.
Summer in a bowl; party on the palette.
Ingredients
Seedless watermelon (half a mini or quarter of a large), cut into 1-inch cubes
Strawberries (on clamshell container), hulled and sliced
1/4 cup basil, torn (or chiffonade, if you want to be fancy)
1/4 cup feta
Olive oil, salt, pepper to taste
Instructions
Toss all ingredients together in large bowl.
Taste for seasoning (the oil, salt, and pepper are clinch here).
Enjoy.
