You're on an amazing hike. The High Sierras roll out in serene splendor before you. You're ready to refuel, reach in your pack, and grab...a flatted, soggy sandwich. Nah. That won't do.
Pro-tip: make your sandwiches into wraps.
Pro-tip x 2: add all these yummy things and make it sing. (Took pictures of the prep, but was too busy enjoying the view to snap the wrap. Trust it was as delicious as the scenery.)
Ingredients
2 (5oz) cans tuna (solid white in water recommended), drained
1 avocado (add another, if big avocado fan)
2 tbsp Sriracha (optional)
1 tsp Dijon mustard
1 tbsp mayo
1 celery, diced*
1/4 red onion, diced
2 green onions, chopped*
1 tbsp fresh cilantro, chopped
Salt & pepper, to taste
2 cups leafy green lettuce
1 or 2 carrots, cut into matchsticks*
4 tortillas
Instructions
In a bowl, mash avocado. Add mayo and tuna. Mix to combine.
Add Sriracha, mustard, mayo, celery, onions, cilantro, salt, and pepper. Mix.
Assemble. Top each tortilla with greens, carrots, and 1/4 of tuna mixture. Add more Sriracha for more spice, if craving more heat.
Roll up the tortilla (sides in, fold end closest to you over & tuck in fillings, and roll until closed). Wrap in foil or plastic wrap.
Try not to focus too much on your yummy lunch while hiking.
*Note: if you want to skip some chopping or don't want to purchase too many veggies, you can skip these.
